Lentil salad and chia with smoked salmon

Polyunsaturated fatty acids, those that come from the diet, particularly omega 3, ensure the flexibility of biological membranes. Let's go back to the importance of the cell membrane. This plays an essential role in the exchange of nutrients (regulation of the passages), but also of CO2, hormones, oxygen and other elements allowing an optimal cellular activity. To function properly, the plasma or cytoplasmic membrane must be flexible, deformable even.

French researchers have discovered that the presence of omega 3 makes the membranes more malleable and thus much more sensitive to the action of proteins (ah, always the importance of amino acids) which deforms and cuts them. [...] Two grams omega 3 a day seems to be the union minimum our membranes need to stay supple ... And we are flexible and sane! Come on, a little recipe rich in iron and omega 3.

ingredients

  • 200g of green lentils (2 full glasses)
  • 1,5l of water
  • 4 slices of smoked salmon
  • 1 red onion
  • 1 teaspoon of cumin
  • The juice of a lemon
  • 4 tablespoons of olive oil
  • 1/2 bunch of parsley
  • 2 tbsp of chia seeds
  • Salt
  • Pepper


Preparation

  1. Rinse the lentils in cold water and put in a saucepan. Cover with 1.5 liters of cold unsalted water. Bring to a boil and cover. Let cook for 25 '. Drain the lentils, to put them in cold water to stop cooking.
  2. Finally chop the onion. In a container, onion version, olive oil, add lemon juice, cumin, salt and pepper.
  3. Cut the salmon slices into small pieces.
  4. Put the lentils in the sauce, add the salmon pieces and the chopped parsley. Sprinkle with the chia seeds.
  5. Serve at room temperature
