Sea sauerkraut - to sauerkraut your intestines!

Don't struggle anymore, eat it! And in the form of sauerkraut it's even better... To boost your gut and therefore your brain, fermented cabbage will pamper your microbiota with the contribution of friendly bacteria (probiotics).

The accompaniment of the sauerkraut with seafood will amplify the effect of "a healthy brain in a healthy gut".

So here is for you the "sea sauerkraut" recipe - inspired by the site Marmiton!




Preparation of about 20 minutes, cooking for 80 minutes

Ingredients (for 4 people)

  • 1kg of sauerkraut (raw or cooked, if it is raw cook it in salted water for 45')
  • 500 g of haddock
  • 500 g of firm white fish, cut into 4 equal parts
  • 8 gambas
  • 12 small potatoes (beware, if they are too big cut them in 2 or 3)
  • 3 large onions
  • 1 shallot
  • 2 bay leaves
  • 2 teaspoons of thyme
  • 2 teaspoon of curry powder
  • 2 teaspoons of salt
  • 12 juniper berries
  • pepper (to taste)
  • 25 cl of dry white wine (riesling type)

Preparation

1. In a large cast iron casserole, melt the 3 chopped onions and the chopped shallot in a little fat.

2. Put half of the sauerkraut, season with 1 teaspoon of salt, 1 teaspoon of curry, pepper, 1 bay leaf, 1 teaspoon of thyme, half of the juniper berries.

3. Cut the haddock into 4 pieces, and place 2 on the sauerkraut.

4. Put the second half of the sauerkraut, season with the rest of the spices. And place the remaining 2 pieces of haddocks.

5. Sprinkle with white wine.

6. Let simmer for a good hour, over low heat, covered.

7. After 1 hour, place the 4 fillets of chosen white fish, the 8 gambas, as well as the potatoes.

8. Let simmer again for 15 min covered, then another 10 min without cover.
