Ideal breakfast: the banana omelette

Banana, omelette... This mixture might seem suspect, but it’s so tasty and quick to make! This breakfast, featured in the book "Eating Well Combined" by Olivier Bourquin, is perfect in terms of nutritional composition.
Ingredients
- 3 eggs
- 1 teaspoon of water
- 1 banana
- 1 tablespoon of honey
- 1⁄2 tablespoon of pumpkin seeds
- Oil
Preparation
- In a medium bowl, beat the eggs with 1 tsp of water.
- Lightly oil a small non-stick skillet and pour in the egg mixture until it starts to set at the bottom.
- Lift the edge of the omelette with a heat-resistant spatula, pull the firmer portion towards the center and let the runny portion deposit at the bottom. Cook until the omelette is almost set and the bottom is just barely golden.
- On one half of the omelette, place the sliced banana, add the honey and pumpkin seeds. Fold the omelette over, leaving a 1 cm border so that the filling appears. Cook for 2 min and serve.
